Vanilla cupcakes with chocolate centre

I made these cakes today and they are very tasty indeed.

Ingredients

175g low fat marg
175g sugar
3 eggs, beaten
175g self-raising flour
2 tsp vanilla essence
1 small bar of dark chocolate

Oven temp 175c for 10-12 mins it made 18 cakes done in silicone cake cases

Cream marg & sugar tog until pale & fluffy
Add the eggs a little at a time
Sift flour & gently fold into the mixture
When thoroughly mixed, add vanilla & combine
Place half the mixture in each of the cupcake cases. Make a small indent in the middle & add a small piece of chocolate. Add the remaining cake mix over the top ensuring the chocolate is well covered and remains in the middle of the cake mix
I cooked 12 on the lower rack using my mesh and also the extender ring, the cakes should be firm and spring back when touched.

Made in my Andrew James 12 litre oven

Timings & temp might be different in other ovens.

Love this recipe Toots.

But if I am doing it - the recipe will be slightly different,

like this "... make a small indent in the middle & add a small piece of chocolate, put one piece in your mouth. Repeat this action for each cupcake. Add the remaining cake mix over the top ...."

Tried that when I made them, I,m now stuck in the kitchen as I,m too fat to get through the door , waiting for a handsome fireman to come and rescue me

Hi toots love the recipe thankx as for the other suggestion would love the handsome fireman rescue but would need it to be in the dark as once he sees me he'd run in the oppisite direction so would still be stuck Sad

Perhaps a blind folded fireman could be arranged for you, or you could bribe him with your halo genius cooking then hope he gets stuck as well lol
