I then prepared the veg Potatoes, Parsnips, carrots & red onions by par boiling (minus the red onion) for 6 mins & then I separated the spuds & coated them in a mix of hot paprika, garlic salt & rosemary & then I sprayed them all with olive oil.
I put in the low rack & preheated the oven to 220 & then I put in the lamb & cooked for 10 mins.
Turn the lamb & then add the veg along with the spuds & cook for a further 10 mins turn the lamb & veg.
Turn down the heat to 180 & cook for a further hour (I like my roasts well cooked)
Take out the lamb & put in a warm oven to rest, meanwhile turn the veg & then add the high rack & put in the Yorkshires & cook for 20 mins & then turn over for a further 10 mins.
