6oz castor sugar
6oz self raising flour
1 heaped tsp baking powder
2 tsps coco powder
4 tbsp milk
2 large Eggs
Pre-heat the HO 170c
USE THE EXTENSION RING DURING COOKING
In a large mixing bowl, mix sugar and butter together, now add the eggs and beat well, gradually sift in the flour and the baking powder an mix well, in a small cup or jug pour in 4 measured tablespoons of milk, add the 2 teaspoons of coco powder and mix together until smooth, now add this to the cake mixture stirring until the coco mixture has been well mixed in.
Keep beating the mixture until it reaches the dropping consistancy that you have when it is ready to put in the tin.
Now I would have lined a 1lb loaf tin with greaseproof or parchment paper then I would have put in the mixture, Placed the tin on the top rack and cooked for 50-55 mins.
After which time I would test it with a skewer,if the skewer comes out clean and not sticky it is done if not then cook for a further 5-10 mins.
