Baking cakes/biscuits

Post  louise2613 on 20.01.11 8:31

I baked Shortbread the other day in my new halogen oven and they were fab clap

Has anyone made fairy cakes and done any other sort of baking in theirs? I do alot of my baking in my regular oven i.e. flapjacks, brownies, pies, fairy cakes etc can these all be done in my haolgen?

Hi Louise2613
Congratulation on a very good start yes you can do everything you would normally do in the main oven in the halogen although it's a bit of trial and errorwhen it comes to cakes i've made banana cake and nigel lawson gluten free carrot cake in my ho plus other cakes. The trial and error bit comes in with the temperture as ho cook books give a temperture which can be a bit ambitious i.e to high, the best tip i can offer it works as i've used it several times is to either
cover a large cake with tin foil at the start uncover towards the end, use the steamer tray if you have one to help disperse the heat or cover the hi rack with tin foil that has lots of pin holes in it.
If you look in the A-Z for recipes i've posted a few that i've done, hope this info helps good luck with other cakes

Hi Poppyseed saw your request for shortbread i've got this recipe for shortcake so thought i'd put it in hope it works as it not one i've tried.

Ingredients

110g Self raising flour
30g caster sugar
30g butter
75ml milk

Sift flour add sugar and combine well.
Add butter and work until it looks like bread crumbs.
Add milk a littke at a time until you have a soft but not wet dough
On a floured surfaceroll out to about 4-5mm thick. You make one big round or biscuits prick the top with a fork.
Preheat oven using ovens own preheat setting
Set temperture to 210c
Cook shortcake on browning tray for 10-12 mins until just golden
Turn out to cool.

Makes 6-8 depending on size

to alter this to coconut shortcake

increase
sugar to 50g
flour 175g self raising
50g desiccated coconut
butter 110g

Cream sugar and butter
add flour and coconut combine into a dough
roll out cook at 180 (no preheating for this one)
cook for 30 mins

Makes approx 8-12 depending on size
