Sweet & Sour Cod

I cooked this last night ,

Ingredients

2 skinless cod fillets
2 Tbsp tomato sauce
1 Tbsp sugar
1 tbsp mango chutney
1 tbsp vinegar
225 tinned pineapple in juice
1/2 green pepper
1/2 onion cubes
1 tbsp oil
1 tbsp cornflower
Serves 2

Method

1. Place cod & oil on round oven tray and season, put in halogen oven on high rack 240c for 6 mins turning once.
2. In a bowl add tomato sauce, sugar,mango chutney, vinegar, pineapple, green pepper, onion & cornflower (pre- mixed with a little cold water).
3 Mix well then pour over the cod and cook for a further 10 mins stirring twice.

Can also be done with chicken, sauce is really nice.

My grand mother used to make a similar dish which was served with boiled rice. I remember how much water I had to drink when eating this tongue because hers had lots of green chillies added and also the mango chutney was replaced with real mangoes. We had mango trees in our backyard.

Hi Reeta,

I,m guessing you having mango trees in the backyard was nice to have fresh fruit on hand also guessing it was not in England. My nan used to make the best rice pudding and apple pies .
Such fond memories of our childhood

I have some more fish recipes in my new cookbook I have not tried them but if you would like the recipe for them here is the list

I did the Sweet and Sour Cod today Toots, it was delicious thank you. thank you We love fish, but it`s a pain trying to find "healthy recipes" that are also tasty and filling. I would love to see some more of your recipes if and when you have the time to put them on here.
