APPLE: Eves' Pudding

For two but all easy to increase

20 x 28 cm oven dish
2 - 3 apples
squeeze lemon
tablespoon caster sugar
tablespoon water
knob butter

cook apples in middle oven for 10 mins stir regular till lightly coloured & nearly cooked
10 - 15 mins

Sponge

50gm Butter
50gm caster sugar
1 egg beaten
50gm self-raising flour

Cream Sugar & butter add egg stir quickly. Fold flour lightly don't over work. Plop dough on fruit (don't worry if fruit not fully covered) Cook @ 170 - 175 c for 40 mins or until skewer comes out clean leave to cool serve with custard, cream, ice cream or just plain
