Eves Pudding for two

Hi Everyone
Well just cooked and demolised an eves pudding was for two but on me own so nice i finished the whole thing Eating yes I know it's bit piggy but was nice heres the low down for you all easy to increase Very Happy

20 x 28 cm oven dish
2 - 3 apples
squeeze lemon
tablespoon caster sugar
tablespoon water
knob butter

cook apples in middle oven for 10 mins stir regular till lightly coloured & nearly cooked
10 - 15 mins

Sponge

50gm Butter
50gm caster sugar
1 egg beaten
50gm self-raising flour

Cream Sugar & butter add egg stir quickly. Fold flour lightly don't over work. Plop dough on fruit (don't worry if fruit not fully covered) Cook @ 170 - 175 c for 40 mins or until skewer comes out clean leave to cool serve with custard, cream, ice cream or just plain chef

You are a star. I've copied your Mincemeat and Apple slice recipe to the A-Z under Cake and Mincemeat as it would soon get lost amongst the introductions.

thank you for doing all the transfering over for me sorry to cause so much work but it great to be able to increase our list of recipes I've just posted a scone recipe study bit of a recipe bug here, that's why i'm known as humming bird I love sweet things eek just look at the pounds i'm going to put on pig Chef

Hi Junie if anybody would like a recipe for various bread recipies let me know as i have some, main one's being

Poppy seedbread, Coriandeer & garlic naan, Banana bread, Eeryday bread, Small baguette, spicy ring Roll, Crisp Flat bread, Pitta, Super quick bread sticks & basic bread rolls . Am willing to forward method etc but will take bit of time to do all of them study

Thanks, I'm sure there'll be interest for all of the above - personally I'd love your recipe for coriander and garlic naan - if I had to pick just one. Very Happy (I can be a pig on the savouries)

Hi Junie
I hear your wish so here it is hope you enjoy

Prep 25 mins + proving
cooking 25 mins
1lb 5oz Strong white flour + little extra for dusting
1 tsp salt
1tsp caster sugar
2 tsp easy blend yeast (dried)
3oz butter + extra for greasing
handful coriander
2 garlic cloves crushed
9 fl oz warm milk 2 tsp natural yogurt

Put flour saltsugar & yeast into large bowl.
Melt 2oz butter and stir in along with warm milk coriander &garlic,& yogurt. Mix with round bladed knife to make dough, add dash more milk if dough is crumbly.

Turn dough out to floured surface and knead for 10 mins until smoth and elastic. Place in lightly oiled bowl cover with cling film leave to doubl in size.

Tip dough out to lightly floured surface cut into 8 even sized pieces. Roll each into a ballcover with clean tea towel leave to stand for 10 mins. Thinly roll out each ball into large tear drop shape place on floured tray.

Melt the remaining butter and brush a little over two of the breads. Transfer to greased baking sheet place on upper rack.

Cook for 6 mins @ 250c/482f Stack on plate cover with tea towel while rest are cooked in the same way.

For seeded Naan
Crush 10 cardamon pods using mortar & pestle remove husks crush seeds as finely as poss Add 2 tsp coriander seeds and 2 tsp cumin seed to mortar and crush again mix into dough ingredients and make as above sprinkling sesame seed after brushung with melted butter.

Faster Eves Pudding

Sounds great but you can do the batter cooking part in a microwave on full power in 4 minutes.
I love my Halogen but microwaves are quicker for this type of cake/dessert.
