Recipes for HO cooking - (Meat Thermometer )

After many attempts I have come to the conclusion that there is NO hard and fast rule for various cuts of meat but I have found that the most reliable methods are.....
1) weigh the meat
2) calculate the time and Temp. in the old way
3)reduce both time and temp. by 10%
4) This is the most important... using a meat Thermometer check the inside temp of the meat.. should be 70deg for well done.

A meat thermometer is very cheap and is worth its weight in gold. Take the first reading 5mins.before the calculated time.

I have looked at the choices and the one I recomend is the " Digital food thermometer" by Grunwerg at 9.50. The trick is to check the temp5/6 mins before the end of time... insert the probe into the CENTER 0f the joint. For rare.. about 69deg.. medium 70 deg. well done 71deg. If the temp is not ok, close the lid and restart cooking. I used this method when slow cooking in the big oven and it always spot on however when slow cooking I used a simiar probe to the Taylor eye witness digial probe because this one can be left inserted all the time and you can watch the temp. creep up
\the Grunwerg cannot be left in all the time.
