125g leftover cooked chicken, finely chopped
50g breadcrumbs (made from day old bread)
1 medium egg, lightly beaten
1 teaspoon lazy ginger (or fresh ginger, grated)
1 teaspoon lazy chilli (or 1/2 teaspoon chilli powder)
1 tablespoon coriander leaves, chopped (or 1/2 teaspoon ground coriander)
Salt and freshly ground black pepper
Flour for dusting
Combine all the ingredients except the flour. A lovely smooth consistency can be achieved in a food processor.
Quarter the mixture and shape into balls using wet hands. Flatten a little and dust both sides with a little flour.
Spray a baking tray with a little oil. Place the burgers on the tray and spray the tops with a little oil too.
Place on the top rack of the HO and cook at 220C for 7-10 minutes until browned on top (they will have browned on the bottom too so no need to turn over)
Serve with dipping sauces of your choice and a fresh salad.
