Lemon Drizzle Cake
Loving my HO, I cant stop cooking!
I only cook for one so only a small recipe.
This recipe I have used many times in conv oven. Works well in the HO, if not better.
1 egg Juice of 1 lemon
60g sugar 3 teasp sugar
60g butter
60g self raising flour
grated rind of 1 lemon
Cream butter and sugar together, add beaten egg and lemon rind.
Stir in flour.
Put into lined, small loaf tin.
Bake on bottom rack of HO on 150 for 25 - 30 mins.
Once cooked, prick all over with a skewer, stir 3 teaspoons sugar into the lemon juice and pour all over the cake. Once cooled the excess sugar will crystalise.
Hope you like it.

That does sound good. I'll give that a go when I get time. I'm busy making hot cross buns and bread at the moment. I'm going to cook the bread in the HO for the first time!

Tried this and it was beautiful. Grandchildren absolutely loved it and it is now a regular feature at tea time. Many thanks.
