Filled sweet peppers

Ingredients: 1 pointed pepper per person, halved lengthways, seeds removed
cherry tomatoes,
grated or thinly sliced cheese (or for vegans cheese substitute)
balsamic vinegar
optional garlic, either crushed clove or ready prepared in a jar

Method: Line baking tray if not non stick.
Lay peppers on tray
Sprinkle inside each pepper some garlic if used
Layer some cheese in base of peppers
Fill peppers with cherry tomatoes
Drizzle over balsamic vinegar

Bake lower rack, 200 for about 15 mins and check they are nice and soft.
