Egg custard

Post  chrisjaz on 06.05.14 21:25

I thought i had to share this !!!
I usually bake this in my electric oven , however i thought why not give it a go in the halogen!!
Big Mistake !!!!! don't make a Baked egg custard in the Halogen oven.
Well the pastry was cooked in the halogen first but not cooked enough really , anyhow put my egg milk sugar mixture into the pastry case and popped back into the halogen on low rack in a glass flan dish with the metal steamer tray as it has the holes in , my idea was that it will help the pastry to crisp ( wrong ) what happens next , i take the bowl to the sink and just check on the oven to my horror i see the custard mixture swirlling around , oh no !! take it out quick and get it into my electric oven to cook .
So Egg Custard cannot be cooked in a Halogen oven !!!!!
At least now i know and hopfully if you have read this you will know to !!!

Thank you for the warning. As a new halogen oven user I still haven't cooked much stuff. Too bad you had to experiences it yourself, but I guess it should have happen sooner or later.

re egg custard

Post  eileen54 on 20.08.14 11:29

Puzzling my sarah flower baking book has a recipe for quiche lorraine baked in the halogen, I would have thought that egg custard mixture was similar to the quiche mixture. I may have to try this and see what happens.

RE: Egg Custard

gave the egg custard a go. I used a pre baked pastry crust,(bought). At first I decided to cover with foil for the first 10 mins to stop the custard swirling, when I uncovered it , it was still liquid so put it back in uncovered , yes the custard was swirling but I left it and it baked beautifully and set just as it was supposed to. my recipe
1 baked pie crust
1/2pint of milk
2 eggs
2 tbls of sugar
whisk egg milk and sugar together pour into pastry case. Place in a pre heated halogen,(mine is andrew james) 180 deg  and bake for 20 to 25 mins or until set

Thanks Reeta, couldn't work out how to put the photo on as an image. Forgot to say that there is only half of the egg mix in the pie as I wasn't sure how much to put in, but I could have used all of it and the custard would have been deeper, I also did not use the extension ring. The only other thing is that you can't put nutmeg on the top , it just gets stirred in.
