Chicken with Red Onion and Peppers

Done full Chicken at 180 c for 90 m with Red Onion and Peppers and one Orange cut into 4 pieces stuffed into cavity . Was cooked well but needed a bit more salt and pepper . It tasted very good for first attempt . will keep trying .

Don't tend to roast a whole chicken as it never all gets used but think I can adapt this for chicken breasts-just like a Kiev but with finely chopped red onion, peppers and garlic butter in the centre garnished with roasted peppers and red onion (and leeks for no more reason that I love them and they do so well in the halo)

Wow that worked!

I took a chicken breast and sliced it almost all the way along then opened it flat and spread the inner sides with butter, garlic, finely chopped red onion and peppers then folded it all back together surrounded it with red onions, peppers and leeks and roasted the whole lot for 20 minutes then put some cheese slices over it and gave it another couple of minutes until the cheese was melted....
