first roast dinner...

hi  all ...
just made our first roast dinner in the HO....
joint was a boneless lamb shoulder joint @ two & a half pounds (approx)
placed in oven roasting bag and cooked on the low rack
@150c for the first hour ,during which time i prepared the
potatoes ,3 medium peeled and cut in half, then parboiled
for ten to 12 minutes on the hob, drained and roughed in the pan (tip from here)lightly brushed with sunflower oil and then allowed to cool.
first hour up for the joint ,added potatoes around the joint
set for another hour ....offf for a cuppa tea !!!
check the progress after 30 mins ...pots still white !!!!
upped the temp to 180c for the final 30 mins .
put the mixed veg in the pressure cooker and set that going
pots cooked perfect !!!!
test the joint ...juices running clear... perfect !!!
took out the joint and left pots to keep warm  
drained the veg and made the gravy
carved the joint, beautifully cooked, slightly crispy on top
but moist and tender....went down a treat !!!!!

Did you keep the skin on? Every recipie I've seen for roast lamn seems to suggest taking the skin off and removing an excess fat. But I love a decent crispy skin and the fat

any favors ...lol !!!!
