MY SUCCESSFUL SCONES !!

Hi All !!!

Had my second attempt at fruit scones and cheese scones yest and I was very pleased with the result.  

250gms sr flour
30 gms or 1 ounce butter
90 gms caster sugar
30 gms sultanas
1 egg beaten
170 ml milk

I just whizz flour and butter in food processor and then chuck in the sugar and fruit and bind with milk and egg reserving some to egg wash the tops.

cheese scones exactly the same quantities of flour and butter  and the egg and milk and about 3 ounces of grated cheese and some mustard according to taste. I put some grated cheese on the tops too :-)

I baked these on the lower rack of the halogen and placed them on one of those mesh trays you bake pizzas on covered with lightly greased greaseproof paper which I cut to size to sit nicely on the bottom rack.

I have found that the smaller the scone the better they turn out too
Bake for 10 to 15 mins and DO NOT use the extension ring.
temp set between 200 and 250. PERFECT yummy !!!!

Thank you for a really successful recipe x I didn't have a pizza mesh so I cut up my non stick oven chip mesh that I never use now, using the halogen rack as a template. Worked well but next time I'll turn the scones over for the last 5 mins for a crispier bottom! xx
