How to stop soggy pizza

Post  Rapthorne on 03.06.13 20:59

I have tried everything to stop it from happening (even bought one of those grids that lets the air circulate better) but every time I cook pizza in my HO, the base always ends up soft and a little soggy. Has anyone got any guaranteed methods of getting a nice, crunchy base on their pizza? Or at least one that isn't soggy.

Note, I usually cook frozen pizza. I use the extension ring and put the pizza on the high rack at 200 degrees for 15 minutes. Other temperatures or times tend to lead to the topping either being undercooked or burnt

Unfortunately I have used the search and checked out other posts, and the posts didn't prove useful to me. I already have a pizza mesh which I use and I have been experimenting with cooking times and temperatures with little success.

Pizza dish upside down to cook.

I found this works for me.

Take the bottom rack and place it on top of the upper rack. This increases the overall rack surface.
Place the Pizza dish face down onto the upper racks.
Place Pizza onto cooking mesh ( cut to the upper rack size and shape ).
Pre-heat the Pizza dish ( this facilitates the cooking of the Pizza bottom ).
Pick up mesh and Pizza and place onto Pizza dish.
Cook at 180c for 12 minutes, remember to turn bowl 180 deg to ensure even cooking.
