1 Medium chicken breast
1 Small/medium clove Garlic
Butter or equivalent
2 rashers of bacon
Dry the chicken breast in kitchen towel
Slice down the length to make almost 2 fillets but dont slice right through, open and lay on board
Spread one side with butter
Sprinkle garlic which is finely chopped (be careful - I used too much and it was a bit strong ;o)) over the butter trying to keep it even.
Sprinkle the parsley over this (I used dried, but fresh chopped would be better)
close the chicken breast up again
wrap widthwise with the bacon
Put on a baking tray and cook at 200C / 400F for 10 minutes. Once cooked, leave to stand a few minutes before serving.
The chicken was cooked moist, and the bacon cooked a little dry, but this is a good combination. Worked well and definitely better this way.
