Over/undercooked cakes!

Hallo everyone,
I have been busy experimenting and delighted with my Halogen so far BUT having problems with my cakes....So far baked on lower rack, no extender but cakes have tough skin on top and undercooked on bottom. Should I use the
top rack with the extender ring to allow more air to circulate? Lemon Drizzle Cake was lovely but it was baked for only 30 mins or so..... Thanks everyone. Chef

Yes, just managed to bake a beautiful cake - a date loaf. Covered the tin about 10 minutes into baking with tinfoil. Thank you.
