Bacon and Egg Sandwich Filling

Bacon and Egg Sandwich Filling


2 rashers smoked bacon
2 eggs(in shells)
2 tbsp mayonnaise
pinch dried tarragon
salt and ground black pepper


Place the bacon and eggs on the high rack.

Cook at 200degC for 10 minutes.

Cool the eggs under cold running water then remove the shells.

Put all ingredients into a food processor and blitz for a few seconds.

If you don't have a food processor grate the eggs and finely cop the bacon and then mix with the other ingredients.

This filling is also delicious on a jacket potato.
