Struggling to understand what went wrong

Post  Sandy L on 28.12.12 18:29

Hi

I'm new to HO but used it for roasted parsnips on Christmas Day with good success (after a few practices).

However, my next experiment was fried eggs. I followed a recipe given in the forum but my oven must be different. What I can't understand is why the yokes went brown, bubbly and baked but part of the white (closest to the yokes) remained translucent and wouldn't cook for ages. All I can think is that I had the temperature too high (because the yokes were still runny underneath), but even so I can't understand why it was so difficult to get the white evenly cooked. I heated the oil for 5 mins at 250 and then expected the eggs to be ready 5 mins later, but the whites took much longer. I used the low rack. Any suggestions? My HO was fairly cheap and I'm wondering if that's the problem. It's a PROlectrix 12 litre, and it seems to work OK. I'm not a wonderful cook with any oven, but I usually understand what has gone wrong, and this time I don't get it.

Hope someone can help.

Hi Sandy,

based on my own experiences with several HO and also what members have said, I can tell you that not all halogen ovens give the same results even if you follow the same recipes. That’s why I always advise HO users to experiment until they get it right for their oven.

I agree – your temp was too high and since the heat is coming from the top, it overbaked the top layer.

Cook it on high rack next time with the ring on top. This will give room for hot air to circulate all around/beneath the egg. Preheating the oven /tray is good. Reduce temp to 180 to 200. It’s best to cook at a low temp for longer if you have to.

Ideally they should provide a third rack with all halogen ovens. One that is about 2 inches high - then no need to use the extender ring for certain food Smile

Good luck Sandy and welcome to the forum

Hi Reeta and Sandy,
I bought another high rack for my oven and my husband cut it down for me and I use that with no ring.
Wishing you a Happy New Year and a Healthy One
