baking sponge cakes

I have been trying to bake small sponge cakes, when cooking they rise up lovely, but as soon as I take them out, they loose the height, they taste fine, but I would like to know what causes them to drop. I cook them on the low rack at 180. for 12 to 15 minutes until brown and firm to touch.

leave them in the heat for a few mins after oven has gone off thats what i do tends to work 90percent of the time
