I have made lovely cheesey scones, granmas fruit cake..
This is what I do, and it works.
I piece of foil on the bottom of the oven, held down with the low rack, put on the extender to make it bigger, allowing the heat to circulate.
I then put on the high rack and used the oven to get hot.. If you find that you think the top is getting too brown just lower the heat.
I found with the scones the top looked almost cooked after ten minutes, so just turned the heat done.. Perfect. Hooray. Beth
