chinese roast pork (with crackling)

VERY, VERY simple recipe...

pork belly slab with skin
sea salt (enough to rub belly---pork belly, not yours! Very Happy )

(1) rub salt evenly over pork. let sit for 2 hours.

(2)scald the belly slab in boiling water for 20-30 seconds. pat dry

(3) pierce lots of holes into the skin. the more holes you poke, the crispier the skin (true... at least it was for us).

(4)place meat on lower rack, skin down for 15 minutes on 250C.

(5) turn and cook skin up for another 10-30 minutes (depending on size of pork belly).

(6) remove, slice into 1" thick strips, then slice each strip into 1/2" pieces.

serve with hot mustard.
