Hello and Question

I am relatively new to this forum. Can I thank each of you for all your great information and recipes.
Last Sunday I cooked a pork roast in my 12ltr Halogen following one of the online recipes. The roast was beautiful outside, but very dry on the inside. The other thing that baffled me was the meat, inside the roast did not seem to be that warm - I used a temperature probe to make sure the roast was the proper temperature inside i.e. 165C and it was over well over that? Can anyone help?
I cooked the roast 200C for 20 minutes and then reduced to 180C for 70 flipping over with about 45 minutes left. Smile
