Are upper racks all the same height in different brands of HO's?

Post  MamaG on 07.06.12 21:48

I baked some bread today for the first time, and I had my battle plan all worked out. After researching for hours I decided to follow a traditional temperature to cook the bread, place the round loaf in the cake baking pan on the low rack, use the ER, and then use the high rack to hold a grilling pan to diffuse the heat. However, when I placed the high rack in the oven, it touched the top of my loaf of dough. My bread's top was golden brown in 10 minutes @ 425 degrees F. My bread turned out OK after lowering the temp, letting the high rack touch, and turn the loaf over.

I have a Rapid Wave oven, and I was wondering if I should try to find another manufacturer's high rack, or just cover my baking projects with aluminum foil? My high rack is 3 3/16ths inches high.

Thanks in advance for any suggestions.

Hi MamaG,
all the high racks for sale are same height here in UK (3 3/16ths inches)

You have managed to develop a system for baking bread that works for you. Well done

You could use foil next time , then compare the results. That's the only way to find out - experimenting Smile

Thanks Reeta,

I guess I was confused by a suggestion I read about using the steamer accessory to diffuse the heat. However now that I know a little more about my oven regarding timing I'll use the foil as you suggested.

Thank you again!

Someone did post their cooking experience telling us about using the steamer tray to diffuse the heat. This method has worked well for them.

Myself I put an empty tray/metal plate in the bottom of the glass bowl to reflect the heat back up - beneath food such as pizzas, pies/pastries, bread, cakes ...

Using foil is another method.

My advice would be to do what works best for you
