hi junie. My first attempt was trial and error.it depends how u like it.most people like it falling off the bone we like it to slice like roast lamb.we buy it ready spiced from our local butchers.there are plenty of recipes online for it.heres how i did it.take two lamb shanks rub all over with lemon juice.put separatly in tin foil.add the herbs and spices from chosen recipe cook on 180c for an hour.take out of tin foil place back on rack cook for a further 70 mins.cut potatoes longways into 4 put on rack with 45 mins to go.use juice at bottom of bowl to make rich gravy.do veg of your choice.dont forget i am only a novice at this.
