CAKE: Pumpkin Fruit cake - Diabetic friendly

Pumpkin Fruit Cake
375g Mixed Fruit
250mls boiling water
1 cup of mashed pumpkin (Your cup plus a little more, use a sweet type of pumpkin)
190g self raising flour
1 teaspoon mixed spice (5ml spoon)
1 teaspoon bicarb soda
1 egg
Mix water and fruit together and microwave 3-4 mins (Stir after 2mins)
Once cool, mix together with cooled pumpkin
Add flour, spices, bicarb and egg
Pour into ring pan.
Preheat oven to 150c
Place pan on low rack, use extention ring and cook for 1hr
Remove from oven and cover with foil and leave to cool in tin.
(I have also cook it in an oven , in a cake pan at 175c for 1hr)
