Hello and Welcome Mike

There are plenty of recipes on here that are suitable for diabetics (I am a type 2 as well - controlled by diet). Have a good read when you have the time. You will know the guidelines and a little of what you fancy won't do you much harm.

One of the best pieces of advice I was given is to ignore diabetic specific foods. They are usually expensive and where sugar has been taken out, or reduced, there are usually equally unhealthy ingredients replacing it. Smile

Hi Mike
Here is a recipe for Pumpkin Fruit Cake, no sugar, no milk, no butter, I make for my husband and a friend who is type 1 diabetic You might like to try. I have converted to grams because our cup is 250mls and I believe the English cup is 225mls.

Pumpkin Fruit Cake
375g Mixed Fruit
250mls boiling water
1 cup of mashed pumpkin (Your cup plus a little more, use a sweet type of pumpkin)
190g self raising flour
1 teaspoon mixed spice (5ml spoon)
1 teaspoon bicarb soda
1 egg
Mix water and fruit together and microwave 3-4 mins (Stir after 2mins)
Once cool, mix together with cooled pumpkin
Add flour, spices, bicarb and egg
Pour into ring pan.
Preheat oven to 150c
Place pan on low rack, use extention ring and cook for 1hr
Remove from oven and cover with foil and leave to cool in tin.
(I have also cook it in an oven , in a cake pan at 175c for 1hr)
