We have joined Hugh Fearnley-Whittingstall's Fish fight and are making a concerted effort on eating only sustainable fish.
Dover Sole are not currently in season so I have come back from the fishmonger with some Megrim (Cornish Sole) which is supposed to work equally well in Sole Veronique.
I am a little cautious as I have never cooked fish in my HO yet.
Does anyone have a recipe for Sole Veronique or any other sustainable fish recipes for that matter? I'd be really greatful for any input.
Hope its OK to post this link (Mods please delete if inappropriate). If you watch Hugh's Fish Fight episodes i'm sure you'll all be clambering to sign up for the Fish Fight. Nearly 800,000 people have already and Brussels is starting to sit up and take notice.
