My fruit cake is not cooked inside and the bottom is very soggy the top and outside is cooked perfect

Hi sparky if you type fruit cake in the site serch bar it will come up with all posts about cakes in that list it a topic called "problems with fruit cakes" I came across it last weekend it seems lots of people have difficulty with cakes.

I have recently purchased Andrew James Halogen Oven. Today I made an orange and kemon drizzle cake, this did not cook in the middle at all. Thought I wont let this defeat me and made a fruit cake, same problem, didnt cook in the middle also bottom soggy, put it back in for ages, covered the top with foil but still not good. it took alot longer to cook in the halogen than my conventional oven and after all that time didnt cook anyway!!!!! Big Scream!!!!!!!!!! Just hope it gets better. I have got Cervical Spondylitis so thought having this new oven would be a big help for me as I have trouble using my conventional one! Hi tinkerfreya

This is the one area that causes most problems with a HO. Have a look at the trobleshooting section - the link is above your post. I hope this is of some help.

Hi Tinkerfreya

I have been experimenting with baking in my Andrew James HO and having pretty good results and there are quite a few tips here too. What I am finding is that it is best to use a ring/bunt moulds or muffins they seem to work quite well as the heat seems to not make it to the middle of a whole solid cake at all, unless it is thinner.

Today I made a Lemon cake using 2 round silicone 9 inch moulds. One I cooked in my cooker and it came out perfect as expected and the other in my HO, I put it on the high rack turned the heat to 150/160 and it took close to an hour to cook through, this cake is thinner and denser than the oven cooked one but other than that they both look good (and the taste test will be after tea).
