Banana Bread

Hi

Just made the above recipe. Tastes wonderful but soggy. The recipe says to cook at 175c for 45 mins on low rack covered in foil. Remove foil and bake for further 15 mins. Would the end result have been better if cooked on high rack, with ER and no foil. The recipe comes from Hamlyn 200 halogen oven recipes.

Another cookbook recipe that doesn't work No

Hi Liz,

Place one of the empty metal trays in the bottom of the glass bowl. It will reflect the heat and cook beneath the food.

Preheat the oven , cook on high rack with extender ring on. No foil. Lower the temp and cook for longer if needed.

Placing an empty metal trays in the bottom of the glass bowl works well for cakes, breads, pizzas, quiche, pies etc and you must always preheat your oven with the metal tray in. Any oven metal tray/plate will do as long as it fits.

I find it so soul destroying when it all goes wrong, I suppose I could feed the loaf to the birds but I don't think they would be able to get off the ground for some time!!!

I know what you mean Liz but it can only get better from now on. Don't be too hard on yourself, think of it as a learning experience.
