This is a quick and easy cake to make.
2 tsp of instant coffee granules
125g of self raising flour
125g of soft butter
125g of golden caster sugar
2 large eggs
1 tsp of baking power
You need a round tin cake about 18cm deep. Greased and lined the base.
Preheat your oven to 190 degree C
In a cup, dissolve the coffee in 1 tbsp of boiling water and leave it to cool.
In a mixing bowl, break the eggs and sift in the flour, baking power, add the soft butter, sugar and coffee.
Mix well until smooth and fluffy. Use an electric mixer if you have one.
Transfer into the cake tin.
Cook in the hot halogen oven for about 40 to 45 minutes.
Not all ovens use the same length of time to cook this cake, so use your judgement (when it has risen and looks golden brown, it is ready).
I always cook on high rack with extender ring on top.
Leave it to cool on a wire rack.
