Trying things out I cooked a meatloaf (Bat Out of Hell of course !] and as an experiment to stop it burning on top I put 1/2 inch of water on top. The extra liquid was absorbed by evaporation and by the breadcrumbs in the mix and as it dried so the top browned as the loaf cooked through. I also roasted potatoes and after they were browned on top I turned them and put some parsnips on top of them to stop them overcooking. When I roast potatoes I don't parboil them, just put them in raw and brush oil on them. chef chef chef party time
