Roast potatoes in goose fat

Hi Reeta, I have just seen your recipe for roasting potatoes in goose fat (sorry but cannot post a question in that link) which is super and very clearly written thank you. However, please can you say whether or not you use the extension ring? I am not clear at all when I should use it and when I should just leave it off. Many thanks. Tricia Rolling Eyes

Hi Tricia,

I use the high rack with the extender ring on top. In fact that's how I like to cook in my HO.

Using the high rack allows hot air to circulate freely below the food and the extender ring moves the heat source higher up (this prevents the food getting brown and dry too quick)

I find the cooking temperatures given in most cookbooks do not always work for me. I prefer to cook at a lower temp but for longer if needed.

With a bit of experimenting it will get easier for you and other new HO users.

thank you Reeta, I guess I will 'get there' in the end but I have to admit that it seems rather daunting. However, on another thread, I have stated that tomorrow I am going to cook roast potatoes, a lamb cutlet and greens so I really have to do it now, or hang my head in shame. lol! Thanks yet again.
