Just got a halogen oven to help with the christmas roasting - help please!

Hi,

I recived my new halogen oven at the weekend and i already love it.
Made tea for my 2 year old in it tonight - just brilliant!

But the main reason for getting it was to help with roasting potatoes on christmas day. My main oven has only one shelf and is not very big, so i am planning to roast my bird in that and then my potatoes and other veg in the Halogen oven!

Basically i have had a go already, by par boiling my potatoes and then drizzeling some olive oil over them - and cooking them for about 20 mins or so. They were ok, but nothing special. I like a roast potatoe nice and crispy on the outside and fluffy on the inside, so any top tips really appreciated. In particular is it ok to use things like goose fat - if so what is the best way to do this? i'm guessing becuase of the strong fan letting the fat heat up in the pan as i would in a normal oven is not a good idea?

Welcome Sue

You can use anything in your HO that you would use in your 'big' oven. I have successfully heated oil in tins for yorkshire puds.
The recipe in the link is one I use time and time again and the roasties are lovely.
