confused by recipe book

Post  Lou on 27.11.11 18:30

after a HO only lasting 3 weeks, I got another one from Amazon, the Andrew James bargain. With it came the rubbish instruction/recipe manual and a recipe book by Norma Miller. I am a bit confused because on quite a few of her recipes she part cooks something, takes it out of the oven and sets the timer for say 15mins and puts the food back in for 9 mins. can any one explain the reason the timer is set for much longer than you need to cook the food.
eg's are the oven frittatia on page 37, and creamy noodles on page56. Sorry if it's a really stupid question

Hi Lou

It's a good question. I don't have that book but I'm guessing that it's to do with the mechanical timer. They can be very inaccurate on short cooking times. Some won't even switch the oven on for anything less than 5 minutes. I usually set the timer for a bit more time than I need and rely on a digital timer for accuracy.
I hope this helps.
