How to stop chicken going dry?

Post  Pezza on 21.09.11 18:32

Hi,

I cooked some chopped frozen chicken today. It was cooked throughly but was dry. I put it on 200c for 15 mins as it say's on the pack. I put it on the low rack aswell. It was very dry! Is there anythink I can do to stop it going dry?

Thanks
Pezza

Hi Pezza,

It is best to defrost the chicken before you cook it

Reduce the heat. When heat is too high, it will cause the meat to become dry and tough. Medium heat is advisable.

Use the extender ring if you have one, and experimenting will provide the best result on how to cook chopped chicken in your oven.

Keep notes so that you remember the details for the next time.

Hi Pezza

I have some of that chicken in my freezer at home that I haven't tried cooking in my HO yet (I'm currently on holiday). I'll have an experiment when I get back to let you know how I get on.
I think lowering the temperature as Reeta says would help. I would try adding liquid, like lemon, lime or orange juice, wine and herbs/spices to help it stay moist.

Hi Pezza

I needed a quick supper tonight. My frozen chicken pieces were from Asda and I used half the packet for two of us (approx 183 grams). I followed the oven instructions which said to wrap loosely in foil and cook for 25 minutes at 190C. I didn't add liquid as there is enough moisture in the frozen chicken. I placed it on a baking tray on the top rack with the extender in place. I checked it after 20 minutes and it was piping hot, I then tossed it with some soy sauce and spices in some stir fry veg in a wok and served with rice.
It was moist and absolutely delicious - I hope this helps you.
