Spinach and Eggs

I have been playing around with adapting recipes from my old recipe books as I keep reading that cooking with the HO is so similar to a conventional oven, just cooks on a lower temperature and watch the timing. Yesterday I made these spinach and egg starters and we enjoyed them. Would also make a great snack with toast soldiers to dunk.

1 greased ramekin per person.
Bag of frozen spinach, thawed and drained well
1 egg per person
White sauce.
Grated cheese
Seasoning.

Chop the spinach, season with salt, pepper and any other seasonings you fancy and put it in the bottom of each ramekin.
Make a well in the middle of the spinach with the back of a teaspoon, crack an egg and drop it onto the spinach.
Either make white sauce with flour, butter and milk or use a packet sauce mix.
Pour the sauce in to just cover the egg and spinach.
Sprinkle with grated cheese.
Cook on low rack, 160°C until cheese melts and eggs are cooked but still soft.

This is where the halogen oven comes into its own. I can watch what is happening and stop the cooking at the right time, unlike my normal oven where it is a lot of guesswork.

I agree with you about the HO - it's great to be able to see what is happening. It gives you more control.

Hi Carole.G. I forgot to mention to thaw and drain the spinach very well. In fact, I give it a gentle squeeze with my hands !!!! Like you I am a lover of spinach and use fresh for a lot of dishes, but for this one the frozen is of a mushy consistency that presses into the ramekin with a well in the centre better than fresh. Also, I usually keep a bag of frozen in the freezer, and there are always eggs and a bag of grated emmental in the fridge, so this dish comes into the category of storecupboard dishes for those unexpected moments.
Another tip, sprinkle the cheese thickly over the spinach but sparingly on the egg so you can see when the egg is cooked.

Have just realised I am not very good at writing out these recipes. Rolling Eyes Rolling Eyes

We all miss bits and need to change them from time to time. I think it's because we do our favourite recipes automatically. I'll edit some of the above into the A-Z version for you,
