Try reducing the temp by 15 to 20 degree and cook for longer if you have to. You need to keep an eye on the food as well.
It seems to me that you will need to experiment until you get the right settings for your HO.
It is also a good idea to keep notes of the food, temperatures, timing and various changes/adaptions that you make for each recipe.
Don't despair, you will get there

The HO is a very efficient fan oven and Reeta's advice re timings and temperatures is good.
The good thing is the glass allows you to see what is going on inside.
The trial and error is worth it as once you get a 'feel' for your HO the results are superb.
